Coconut Forbidden Rice

1 c black wild rice

2 c light coconut milk

1 tspn fresh grated ginger

1 tbspn virgin coconut oil

1 tspn salt

1 tspn coriander

1 tspn cardamom (optional) 

In a medium saucepan, heat coconut oil on medium-high heat. Add ginger and rice. Saute for about 1-2 minutes. Add coconut milk and seasonings. Bring to a boil, then reduce heat. Cover and simmer for about 35-40 minutes or until rice is tender.  

*This rice is a delicious side dish, accompanied by Ahi or other fresh fish.
