Hearty Black Bean, Roasted Corn, and Jicama

*This filling dish can be used as a side salad, a main dish topped with grilled chicken or fish, or as a garnish to your favorite protein!

 1 can black beans

1 ear roasted corn, shaved from cob

1 c jicama (chopped finely)

¼ c chopped cilantro

1 sm can Herdez salsa

Juice from 4 small key limes

 Options:

Add avocado, cherry tomatoes, or fresh jalapeno for a kick! 

Salt and pepper to taste. Add all ingredients in a large bowl. Mix thoroughly to coat ingredients with lime juice. Serve cold!
