No Clean Up Herbed Fish and Vegetables

2-5 oz pieces wild fish (Cod or Halibut are ideal for this recipe)

½ Large Tomato (chopped into 1” pieces)

½  c Zucchini or Yellow Squash (chopped into 1” pieces)

2 cloves chopped garlic

½ c Yellow or Orange Bell Pepper (chopped into 1” pieces)

Oregano

Basil

Salt

Pepper

2 tbspn Olive Oil

2 lemon wedges

 Place each piece of fish in its’ own large piece of foil. Fold the edges of the foil upwards to create a “bowl” for the fish. Add 1 tbspn olive oil to each piece of fish, and divide remaining ingredients between two pieces. Season generously with herbs (dried or fresh), salt, and pepper. Close the foil at the top to seal in the ingredients. Bake at 350 for 30-35 minutes. (Fish is done when opaque and flaky, and when vegetables are tender).
